9-Minute Cinnamon French Toast Sticks

Ingredients:

  • 4 eggs

  • ½ cup vanilla nonfat Greek yogurt

  • 4 slices of day-old bread

  • Optional: such as chocolate chips, raisins, pumpkin spice, berries, or whipped cream

Sauce:

  • ¾ cup vanilla nonfat Greek yogurt

  • ¼ cup maple-flavored syrup

  • ⅛ tsp. ground cinnamon

Directions:

  1. Combine the yogurt, syrup, and cinnamon to make the sauce, set aside.

  2. Beat the eggs, ½ cup yogurt, and cinnamon together in a flat shallow dish. Cut each bread slice into 3 to 4 wide sticks and soak them in the egg mixture, turning it once.

  3. Spray a large nonstick skillet with cooking spray and heat it over medium heat until hot. Place half of the breadsticks in the skillet. Cook the soaked bread sticks over medium to medium-low heat until golden brown with no visible liquid egg. This will be about 1 to 2 minutes on each side.

  4. Clean the skillet and repeat to cook the remaining sticks.

  5. Serve with the optionals on top and with the next recipe below with the dipping sauce that was set aside earlier.

5-Minute Scrambled Eggs

Ingredients:

  • 4 eggs

  • ¼ cup milk

  • Optional: Salt and pepper

  • 2 tsp. Butter

Directions:

  1. Beat together the eggs, milk, and salt or pepper (if desired) in a medium bowl until blended.

  2. Heat the butter in a large nonstick skillet over medium heat until hot (this can be the same skillet as used in the french toast sticks above)and pour in the egg mixture. Once the eggs start to set, pull them apart with a spatula and forming them into large, soft clumps or curds.

  3. Optionals such as cheese and seasonings may be added at this time.

  4. Continue cooking while pulling lifting and folding the eggs (but do not stir constantly) until they are thickened and no liquid egg remains.

  5. Remove from heat and serve
