Quick and Easy Lunch Recipes

If you are tired of having the same lunch over and over again, then you should try these recipes for a lunch that you will love and not want to stop packing. It can be quick and easy to make, so you’re not wasting any of your time. This recipe is a kielbasa and cucumber crostini canape roundup with a side of school trail mix.

Ingredients

  • 1 long baguette, cut on the diagonal into ⅓ “ slices

  • 2 Tsp of melting butter for toasting the bread

  • 8 oz of cream cheese

  • 2 green onion stalks, (3-4 Tbsp) chopped, plus more for garnish

  • ¼ cup of chopped dill, plus more for garnish

  • One large garlic clove, pressed

  • ⅛ tsp freshly ground black pepper

Toppings

  • ½ lb of kielbasa (you can also use prosciutto, or even a good quality salami)

  • ½ of an English cucumber

  • Caviar for garnish (optional)

Directions

  1. Preheat the oven to 350F and use a pastry brush to spread butter lightly on both sides of the bread.

  2. Put them into the oven for 5 minutes. You don’t want to overcook them and make them get burnt.

  3. While the bread is baking, put the cream cheese, chopped dill, garlic, and pepper into a bowl and start mixing.

  4. With the bread, spread the dip on one side of the bread and top with kielbasa and cucumber to make the lunch extra special.

An amazing side for this is school trail mix. It contains cheerios, goldfish, cashews,

M&M’s, and pretzels. Don’t forget to mix and enjoy.
