The Secret to Making the Perfect Breakfast Empanada

The breakfast empanada is a easy dish to make and is great to take on the go when you are in a hurry.
Ingredients for Empanada Dough
3 cups of All Purpose Flour
¼ teaspoon Salt
1 ½ sticks Butter
1 Egg (for egg wash)
½ cup of milk
Filling for Empanada
Breakfast sausage
Onions (diced)
Garlic (minced)
Paprika
Peper
Salt
Potatoes (shredded)
Eggs (scrambled)
Preparation
Preheat the oven at 450 degrees
Put the flour and salt into a food processor and press pulse 4-5 times.
Add the butter in halves and pulse 5-6 times.
Put milk in the processor and pulse until it forms a dough.
Knead the empanada dough and flatten the dough out until it is the height of your pinkie. Then, cut the dough into circles.
Make the sausage almost cooked because if you cook it all the way the meat will over cook on the inside.
In a pan put onions and garlic and cook until they have a brown color.
In the onion and garlic mixture put a pinch of salt, pepper, and paprika.
Put the onions and garlic mixture in a bowl to the side.
Scramble the eggs. Then, mix all the ingredients into one bowl.
Once you mix all the ingredients in the bowl put the filling into the individual dough circles, then fold over the dough and crimp the edges with a fork.
Make an egg wash and brush it over the empanadas and put in the oven until the dough is a golden brown.
